Gluten Free Corn Bread
1 1/4 Cup of your favorite baking mix
3/4 Cup of Corn Meal
1/4 Cup Sugar
2 tsp Baking Powder
1/2 tsp Salt
1 Cup Milk
1/4 Cup Olive Oil
2 Large Eggs
Preheat oven to 400
Use your favorite 9" iron skillet, and ligtly coat it with shortening. Combine the dry ingredients in a separate bowl. Stir in the remaining ingredients just until moist. Pour into the iron skillet. Place the skillet into the oven, and allow to bake for 20 to 30 mins.
Since you are using cast iron keep in mind that the skillet will heat faster and hold heat longer. So remove them from the oven as soon as it is done to keep it from drying out. Serve warm and ENJOY!
